Why I Switched to Silicone Banneton Baskets (And Haven't Looked Back)

Sourdough baking is already a lot. The feeding schedules, the timing, the shaping — it adds up. The last thing you want is your proofing basket making things harder.
I picked up this 4-piece silicone banneton set a few months back, mostly out of frustration with my old rattan baskets. Here's what I actually think.
The non-stick works. Dough slides out cleanly. With my old basket, I'd flour it heavily and still sometimes lose the shape on the flip. With silicone, that problem basically disappeared. Less mess, less anxiety right before the bake.
Folding matters more than I expected. I have a small kitchen. These baskets fold flat and fit in a drawer. My old bannetons sat in a pile on a shelf and drove me crazy. This is a small thing that somehow made a real difference day-to-day.
The 9-inch size is a good fit for a standard 900g–1kg sourdough loaf. Not too tight, not too loose. The bowl shape supports the dough through the final proof and helps it hold structure going into the oven.
BPA-free is worth mentioning. A lot of people making sourdough from scratch care about what's going into their food. It's good that the basket touching your dough for 8–12 hours isn't leaching anything.
A couple of honest things: silicone doesn't absorb excess moisture the way rattan does, so your crust may behave slightly differently. Not bad — just different. You'll also skip the flour-dusting routine, which honestly feels like less work.
Getting four baskets in one set is practical if you batch bake or just want backups without buying separately.
Sourdough has enough variables. Your proofing basket shouldn't be one of them.
